Cold Weather Comfort Food
Well, something that roughly approximates winter has finally arrived, and even in a well-heated home, the air has a little snap to it. There’s a perceptible layer of chill on your face and neck. Hands feel a little papery. The faint wooden smell of fire wafts through our consciousness, even if not through our homes.
This is the season when hot chocolate and chicken soup come to mind to take the edge off and raise our core temperature. But for Chef Sam, that would be too easy. So he’s concocted a chicken Marsala with Brittany Ridge Farms chicken and local cremini mushrooms that travels well and warms the soul.
Recently paired with mashed Yukon Gold potatoes and sweet onion, rosemary, heirloom carrots, and Marsala jus. In my mind’s eye, I imagine desserts carrying flavors of ginger, cinnamon, caramel, or chocolate – rich. Well, what more can I say other than “check it out.”
